A vibrant, extra brut Champagne method cider. Delicate honey, acacia and sweet hay on the nose, creamy, fine bubbles and fresh, crisp green apple on the palate. Best enjoyed well chilled, from a flute or tulip.
A year long wild primary fermentation was followed by secondary fermentation with Champagne yeast and a further 2 years ageing in the bottle. we then riddled and disgorged each bottle by hand
The perfect accompaniment to (and alternative to wine in) moules marinière
volume: - 75cl
alcohol - 8 % abv
serve - well chilled (as you would sparkling wine).
pairing suggestions: Spicy foods, roast chicken, salty seafood, especially moules marinière
fined, unfiltered.

Appellation is made like Champagne, but with apples instead of grapes. It’s a blend of unusual & rare apple varieties handpicked at the point of perfect ripeness from each of the orchards we foster in the Exe valley. A year long, native primary fermentation was followed by secondary fermentation with Champagne yeast and a further 2 years ageing on the lees in the bottle. We riddle and disgorge each bottle by hand and add an extra brut dosage - just 4.5g/l.
Contains 25ppm sulphites.
