Full bodied, savoury dry cider with silky smooth tannins, hints of leather, tobacco, spice and oak.
High tannin, bittersweet cider apples from unsprayed Exe valley orchards, harvested in 2018 were wild fermented in stainless steel, 30% then aged in French oak, then matured for a further 2 years in bottle.
Best served at room temperature. Once opened keeps well for up to 3 weeks so there’s no hurry to finish the bottle. Benefits from decanting when first served.
Wax dipped in pure beeswax from bee hives in the orchards, dyed red with beetroot.
food pairing suggestions -Root is made to accompany food in the same way as a big, full bodied, earthy red wine. It has the same structure and tannins, which are intense on their own but when combined with the fats in foods like cheese or steak, they’re softened and rounded, bring out the best in one another. Root also pairs well with rich, bold flavours such as wild game.
